Here's how it works. I always roast coffee in small batches on Monday night. I always ship coffee on Tuesday. If you order after Monday and I didn't roast what you want, I'll roast your order next time I roast coffee, which could be another once or twice during the week, or it could be the following Monday night. It depends on our demand. But I will not ship you coffee that is more than 24 hours out of the roaster. I apologize for any delays in receiving your order, but I promise I'm trying to ship you the best, freshest coffee I can.

This is the most exciting coffee of my career. It's exciting because it's delicious. It's also exciting because of what it is and how it came to be... Tastes fruity like a natural Sidamo. Berries. Some spice like you might find in an 18-year-old Talisker. But SWEET like cake and tropical like guava. It has a fine, heavy body and a bright, Yirgacheffe-like acidity.

This is a blend that I've worked on over the course of four years. It was a working blend, in which I would make small changes constantly to tweak the flavor profile. Now I've got it. This is a smooth espresso- not too acidic and definitely no robusta. The complexity of the espresso is what I love the most. It's buttery and big with crema that stands up to anything you've ever had. Earthy undertones, sweet, sweet fruitiness and a chocolate that grows exponentially as it cools (in an americano). There is a lot more going on in there, and it's in constant flux (because that's the way coffee is, especially in blends). But I'll leave the rest to your taste buds. Suffice it to say, this is a huge espresso. If you don't believe me, ask anyone who's had it. Or try it yourself.

This is a coffee that stands above all others for one reason: quality. This coffee instantly became my favorite when I first started roasting at home several years ago, and still is a mainstay in my offerings. This is a very clean (no defects) coffee that is picked ripe, mechanically dried and hand sorted. It is the most dense of all my coffees and I love the solid sound (like marbles) when it drops into the cooling bin.
It's very clean-tasting, milk chocolate, nice acidity, smooth, sweet butter that just melts in your mouth. It has aromas of rye bread that dominate again in the aftertaste.
