Here's how it works. I always roast coffee in small batches on Monday night. I always ship coffee on Tuesday. If you order after Monday and I didn't roast what you want, I'll roast your order next time I roast coffee, which could be another once or twice during the week, or it could be the following Monday night. It depends on our demand. But I will not ship you coffee that is more than 24 hours out of the roaster. I apologize for any delays in receiving your order, but I promise I'm trying to ship you the best, freshest coffee I can.

This is the most exciting coffee of my career. It's exciting because it's delicious. It's also exciting because of what it is and how it came to be... Tastes fruity like a natural Sidamo. Berries. Some spice like you might find in an 18-year-old Talisker. But SWEET like cake and tropical like guava. It has a fine, heavy body and a bright, Yirgacheffe-like acidity.

This is only the second natural coffee to come out of Colombia, following the world renowned El Boton Natural. This coffee is sweet, tight, and complex with upfront aromas of blackberries and nuts. This is a blend that I've worked on over the course of four years. It was a working blend, in which I would make small changes constantly to tweak the flavor profile. Now I've got it. This is a smooth espresso- not too acidic and definitely no robusta. The complexity of the espresso is what I love the most. It's buttery and big with crema that stands up to anything you've ever had. Earthy undertones, sweet, sweet fruitiness and a chocolate that grows exponentially as it cools (in an americano). There is a lot more going on in there, and it's in constant flux (because that's the way coffee is, especially in blends). But I'll leave the rest to your taste buds. Suffice it to say, this is a huge espresso. If you don't believe me, ask anyone who's had it. Or try it yourself.

This is a coffee that stands above all others for one reason: quality. This coffee instantly became my favorite when I first started roasting at home several years ago, and still is a mainstay in my offerings. This is a very clean (no defects) coffee that is picked ripe, mechanically dried and hand sorted. It is the most dense of all my coffees and I love the solid sound (like marbles) when it drops into the cooling bin.
It's very clean-tasting, milk chocolate, nice acidity, smooth, sweet butter that just melts in your mouth. It has aromas of rye bread that dominate again in the aftertaste.

El Indio is a coffee specially selected by the fine folks at La Minita. Unlike La Minita, El Indio is milled at the regional Tarrazu mill in San Marcos. La Minita gives the mill specifications and pays more for higher-grade, better sorted coffee. This is a great Tarrazu, with chocolate and a bit of winey fruit to muddy the waters a bit. Nice acidity, of course, and a medium body.

During one trip to Colombia, a coffee came up that I enjoyed and that I believe is different enough to fit nicely into our offerings. It's from a farm called La Alondra, which is near Concordia. I managed to go visit the farm and meet the men who produce this coffee. Octavio Restrepo is the patriarch of the farm and he, with his brother and son, works the land, picks, and wet mills the coffee. The three men are very kind and gentle, hard-working farmers. Octavio reminded me of my grandfather, and I liked him very much. His coffee is full of chocolate, raisin, and caramel flavors.

I'm so excited to bring this coffee to our offerings at the DoubleShot. It's really complex, unlike anything I've ever had from Colombia. It's a big coffee, smooth, with a nice, but not overpowering acidity. Delicious baking spices, chocolate, soft melon tastes, kiwi, and some vegetal matter that rounds it out. I think this is going to be one of the best coffees (if not THE best coffee) we have this year.

We used to sell coffee in gallon cans. But we recognize most of you aren't able to consume that much coffee before it goes stale, so we mostly sell pounds of coffee these days. But I still love the gallon. This was the way I decided to keep it available. A gallon of coffee sits around 3.5 pounds, depending on the density of the coffee.

This is what the Sumatra Iskandar tasted like when I first opened the DoubleShot. And the reason I picked it up as one of the few coffees we offered back then. It's a big coffee in every meaning of the word. Big bean, big body, big flavor, huge aroma. When it drops out of the roaster into the cooling bin, it's the coffee I hover over the most; it smells amazing.
It gives robust, earthy fragrances and aromas that you can smell across the room. That, combined with smoke, herb, and anise flavors make this a fantastic coffee.

Somewhat similar to our washed Yirg, this is a dry processed coffee from the Yirgacheffe region of Ethiopia. Not much information is available about this coffee. I assume it was sold as a regional coffee through the government commodity exchange. But it's actually a really good coffee. The same general Yirgacheffe base notes of citrus, but with sweet berry overtones. And it smells so good.

The Moka Stag is a blend of grade four dry processed coffees from Ethiopia. We use it for the fruity highlight in our Ambergris espresso blend. But by itself it is an interesting coffee. Slightly earthy caramel is layered heavily with winey raspberry flavors.

This coffee comes from the western province of Rwanda, in the Nyamasheke district. It's a washed Bourbon that was produced by a number of small farmers and milled at the Rwabisindu washing station. This station is owned by Emerth and Gaston Gatsinga, who also own a hospital in the area where Gaston is a doctor. The tasting notes on the broker's site say things like citrus, sweet, coconut, fruit, etc. But that's not what it tastes like when I roast it. It's an interesting coffee, but savory. It smells and tastes much like sweet, mesquite barbecue. But as far as I can tell, that's not coming from me over-roasting it. The coffee isn't seeping oil and it doesn't taste "roasty" or "burnt." Just barbecue-ish. It's a big hit with a lot of our customers, and it's certainly an interesting coffee.

This is an interesting coffee. After the traditional processing of the coffee, it is placed in an open-sided warehouse. Throughout the monsoon season, wet winds blow across the beans, as the workers turn them over to ensure they don't mold. This process washes out the beans, and is said to imitate the taste of coffee from centuries ago when coffee was transported across the ocean in wooden-hulled boats.
With a dusty aroma (or possibly bacon?) and flat, dry taste, it's surprisingly drinkable. Earthy, woody, with tastes resembling whole-wheat toast. The processing creates a flat coffee without much acidity, and leaves it with a medium to light body.
In espresso, it turns incredibly buttery, smooth, and syrupy. Interesting pull too (bubbles out of the portafilter).
