- You drank it during the 2024 holiday season, and if you're here you probably fell in love with it. Most coffees like this come and go, leaving only fond memories. But just this one time, you're in luck. I saved one final roast for the nemesis project. Again, this isn't for everyone. This is for the discerning among us who know excellent coffee when we taste it. This lot is up for pre-sale and I won't roast it until it's all sold. Here's the description I wrote for the holidays:
Blueberry. I remember the first time we all tasted blueberry in an Ethiopian coffee and wondered what we’d been missing out on our entire coffee-drinking lives. This coffee hearkens back to that first sip. It’s wonderfully layered with delicate aromatics, a complete flavor profile incorporating graham with florals, berries, and citrus. Wondafrash Edema owns a washing station called Chelichele, where he buys coffee fruit from small local farmers. Though Ethiopians have long been dry-processing coffees, this one was soaked in water for 72 hours to promote anaerobic fermentation prior to drying, which creates the enhanced complexity in the cup. One sip and you’ll understand. It’s one for the ages.
