- While different coffee varieties on the same farm taste unique, so does the same variety grown in different places. That’s the effect of terroir and farming practices. In my experience, Caturras are even more susceptible to this influence, much like the Pinot Noir grape in wine. This one, produced by Luz Helena Salazar at her farm, Maracay, tastes fresh and light, despite the decidedly earthy aromatics. Maracay has become one of our favorite mainstays and this season we’ll experience various iterations of the same coffee. This one is washed, limiting the amount of fermentation to the shortest amount of time required to separate the fruit from the seeds. It’s the most basic of all coffee processing, and provides a basis for our understanding of the effects of further fermentation on the cup. Coffee 101.
