  • From the Malabar region on the southwest coast of India, this is a natural coffee, which is harvested and processed, sorted and graded, and then stored in warehouses until the onset of the monsoon. For 12 to 16 weeks, during the months of June through September, the coffee beans are spread on the floors of open-sided warehouses, where the damp monsoon winds are allowed to penetrate the crop, swelling each bean and changing its color from green to yellow. The result is a coffee with much lower acidity, and interesting flavors that are meant to simulate the coffee of 100-plus years ago, when it was shipped in wooden boats around the southern tip of Africa, to markets in Europe - the ocean winds and water would change the coffee, much like the monsooning process does today.  Our new Monsooned Malabar is a super-grade. These coffees were selected from superior lots, which normally would go on to become washed specialty coffees. These high-end lots were then sent to a company called Aspinwall & Co, which has the longest track record and most experience monsooning coffees in India. The end-product is a cleaner, distinctive coffee that is a great espresso base and an interesting cup.
