- I don’t normally like Pacamaras. They’re a cross of two varieties that, in my opinion, shouldn’t have been bred. Known more for its bean size than its taste, Pacamara is the kind of thing that lures in the uninitiated. But Juan Ramon Diaz has a way with coffee. Juan, his father, and grandfather seeded this coffee, and in 2012 planted it at the highest point on the farm. When Juan was suddenly thrust into the leadership of Montelin, he meticulously began sorting all the details required to produce excellent coffee. This micro-lot was dried on raised beds as slowly as possible, taking 35 days. It’s one of my favorite coffees of the 2024 harvest, and my selection to celebrate the DoubleShot’s 21st birthday.
