And if you’ve enjoyed his washed coffee, this natural is not to be missed. It’s grown on the same farm, way up in the mountains of Nueva Segovia amid towering pine trees, from the same variety as our washed coffee, but processed differently. Sergio harvests only ripe coffee cherries and then puts them on raised beds he built on the farm. The slow drying at high elevation allows fermentation to transform the coffee seeds, bringing out hidden flavors and filling the cup with simple, straightforward aromatics. I think you’ll be impressed with the silky mouthfeel of the liquor and its balanced aromatic profile.
