This coffee hearkens back to that first sip. It’s wonderfully layered with delicate aromatics, a complete flavor profile incorporating graham with florals, berries, and citrus. Wondafrash Edema owns a washing station called Chelichele, where he buys coffee fruit from small local farmers. Though Ethiopians have long been dry-processing coffees, this one was soaked in water for 72 hours to promote anaerobic fermentation prior to drying, which creates the enhanced complexity in the cup. One sip and you’ll understand. It’s one for the ages.
