  • Every year I pick out a special coffee that I want to roast and serve throughout the final few days of the holiday season. This is it. It’s a throwback to 2014, when we featured a yellow honey from La Pastora. The farm is in the Tarrazú region of Costa Rica, at an elevation higher than Denver. Minor Esquivel and his family take as much care of their coffee as they do their guests. Each time I visit, they welcome me with kindness and generosity, plying me with fruits from the farm and sweets from their kitchen. I love to walk around the patios exploring a host of new coffees and processing experiments. This coffee went through 15 days of anaerobic fermentation, then dried in the sun on raised beds for a month before being stored in air-tight bags for another 20 days. The result is a cup that ranges the full aromatic spectrum.
